Baked Potato Bar
4 russet or sweet potatoes
1 Tbsp olive oil
1 yellow onion, chopped finely
1 lb lean ground turkey
3 green onions, chopped finely
1 bunch of broccoli, chopped in bite sized pieces
1 can black beans, rinsed
1 cup cheddar cheese, shredded
1/4 cup butter
1/4 cup light sour cream
1 cup salsa

1. Once your potato is scrubbed, dried, and pierced with a fork, place it on a microwave safe plate and put into the microwave. If cooking more than one potato at a time, make sure that the potatoes are not touching.
2.Cook the potato for 5 minutes and then carefully flip and cook for an additional 5 minutes. For every extra potato you’re cooking, add about 1 minute for each side.
3. While potato is cooking, drizzle olive oil in large skillet over medium heat and add chopped onion. Once translucent, add the ground turkey and cook until no longer pink/cooked through entirely. Remove from heat.
4. Once potatoes are soft, cut in half lengthwise. Run fork through potato, mashing it up.
5. Add toppings of choice. Enjoy!
