Crockpot Italian Beef

Ingredients

2-3 lbs rump or chuck roast
2 packets of Good Seasons dry Italian mix
2 (12 oz) jars of pepperoncinis (the juice only)
3 cups water
1 pkg frozen steamable broccoli – side (cook according to package)
Mashed potato side (prepared or homemade)

Instructions

1. Mix 3 cups of water, 2 packets of Italian dressing mix and the juice from the pepperoncini jars in a small saucepan. Bring to a boil and then turn off the heat.
2. Place roast in the crock pot. Pour warm liquid mix over the roast.
3. Cook on low for 8-10 hours.

Quick Tip

You can cook on high for about 5-6 hours to shorten cooking time. Just make sure internal temp reaches at least 145 degrees.
