Grilled Bruschetta Chicken

35 Minutes


4 thin boneless, skinless chicken breasts (~1.25 lb)
1 cup of cherry tomatoes
1 garlic clove, minced
1 tsp olive oil
1 tsp balsamic vinegar
⅛ tsp salt
A handful of basil, chopped
1 loaf of Artisan bread (side)
1 bundle of asparagus (side)


  1. Preheat the oven to 375 degrees (or heat grill). 
  2. Sprinkle salt and pepper on top of chicken, cover, and bake for about 25-30 minutes or until chicken reaches an internal temp of 165 degrees. 
  3. Meanwhile, combine chopped tomatoes, garlic, olive oil, balsamic vinegar, salt, and basil in a bowl. Refrigerate until chicken is ready to be served. 
  4. Once the chicken is fully baked or grilled, spoon the tomato mixture over the top of the chicken and serve!

Quick Tip

You may want to serve a few higher calorie sides with this since it is a lighter meal!
