Grilled Bruschetta Chicken
4 thin boneless, skinless chicken breasts (~1.25 lb)
1 cup of cherry tomatoes
1 garlic clove, minced
1 tsp olive oil
1 tsp balsamic vinegar
⅛ tsp salt
A handful of basil, chopped
1 loaf of Artisan bread (side)
1 bundle of asparagus (side)
- Preheat the oven to 375 degrees (or heat grill).
- Sprinkle salt and pepper on top of chicken, cover, and bake for about 25-30 minutes or until chicken reaches an internal temp of 165 degrees.
- Meanwhile, combine chopped tomatoes, garlic, olive oil, balsamic vinegar, salt, and basil in a bowl. Refrigerate until chicken is ready to be served.
- Once the chicken is fully baked or grilled, spoon the tomato mixture over the top of the chicken and serve!
You may want to serve a few higher calorie sides with this since it is a lighter meal!
