Hummus & Veggie Wrap Up

Ingredients

  • 1/2 cup of hummus
  • 4 low carb tortillas
  • 1 cup torn mixed salad greens
  • 1/2 cup finely chopped sweet onion
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup alfalfa sprouts
  • 1/2 cup shredded carrots
  • 4 tablespoons balsamic vinaigrette
  • 1 bag steamable peas (side)

Instructions

  1. Spread hummus over tortilla.
  2. Layer with salad greens, onion, cucumber, sprouts and carrot.
  3. Drizzle with vinaigrette. Roll up tightly. Serve immediately,

You can swap any veggies or add extra if you'd like! Consider adding an additional higher protein side with these wraps and peas.
