Lasagna Topped Chicken
¾ cup ricotta
1 ¼ cup shredded mozzarella
¼ cup shredded parmesan
1 large egg
2 tbsp chopped basil
4 boneless, skinless chicken breasts (thin)
1 ½ cup marinara
½ tsp Italian seasoning
1 Tbsp extra virgin olive oil
4 cups of fresh or steamable green beans – side
Whole wheat roll-side
1. Preheat oven to 375 degrees. In a bowl, combine ricotta, ½ cup mozzarella, ¼ cup parmesan, egg, and basil. Season with salt and pepper.
2. Place chicken in a 9×13 baking dish. Top each chicken breast with about 2 Tbsp marinara and ¼ ricotta mixture. Sprinkle with Italian seasoning.
3. Bake until chicken is cooked through (internal temperature 165 degrees) or about 28-30 minutes.
4. Change oven to broil and top with remaining marinara, mozzarella, and parmesan. Broil until cheese is bubbly and golden. Garnish with basil.
