Family-Friendly, Quick Meal, Vegetarian
6 low carb quesadillas
2 cups marinara sauce
1.5 cups shredded mozzarella
1 cup shredded cheddar cheese
optional: pepperoni slices or other toppings of choice!
1 bag steamable frozen peas – side
- Heat a skillet to medium heat.
- Spray tortillas with cooking spray or butter and add to skillet. Spoon a few spoonfuls of marinara onto the tortilla. Add shredded cheese, and other toppings of choice.
- Cook the tortilla 2-3 minutes until golden brown. Fold one side of the tortilla over the filling and flip.
Remove from the skillet when both sides are golden brown.
- Slice and serve with warm marinara for dipping.
