Roasted Chicken and Veggies

25-30 Minutes


2 medium chicken breasts (~1 lb), cut into ½” pieces
2 cups of broccoli florets
1 medium red onion, chopped
1 pint of cherry tomatoes
1 medium zucchini, chopped
2 Tbsp olive oil
1 Tbsp Italian seasoning
1 tsp salt
1 tsp pepper
1 tsp paprika
1 packet of brown rice (microwavable or frozen) – side


  1. Preheat oven to 450 degrees. Line 2 baking sheets with foil. 
  2. Place chicken and veggies on the baking sheets. 
  3. Drizzle olive oil on top and then sprinkle on seasonings. 
  4. Bake for 15-20 minutes or until chicken is done and veggies are softened.

Quick Tip

Keep vegetables separated on baking sheets. Let each family member choose which vegetables they want to add to their plates.
