Roasted Chicken and Veggies
2 medium chicken breasts (~1 lb), cut into ½” pieces
2 cups of broccoli florets
1 medium red onion, chopped
1 pint of cherry tomatoes
1 medium zucchini, chopped
2 Tbsp olive oil
1 Tbsp Italian seasoning
1 tsp salt
1 tsp pepper
1 tsp paprika
1 packet of brown rice (microwavable or frozen) – side
- Preheat oven to 450 degrees. Line 2 baking sheets with foil.
- Place chicken and veggies on the baking sheets.
- Drizzle olive oil on top and then sprinkle on seasonings.
- Bake for 15-20 minutes or until chicken is done and veggies are softened.
