Strawberry Fields Salad

Ingredients

10 oz package of mixed greens
2 cups sliced strawberries
½ red onion, thinly sliced
¼ cup dried cranberries
½ cup feta cheese
½ cup pecans
4 slices of bacon, cooked and crumbled
2 grilled chicken breasts, sliced

DRESSING
¼ cup apple cider vinegar
2 Tbsp honey
2 Tbsp white sugar
1 tsp Dijon mustard
Salt and pepper to taste
¾ cup olive oil

Instructions

1. To make the dressing, whisk together all ingredients except oil. Gradually whisk in oil.
2. In a large salad bowl, toss together greens, strawberries, onion, cranberries, feta cheese, chicken, bacon, and pecans.
3. Drizzle with dressing and serve immediately.

Quick Tip

To make this more kid friendly, keep ingredients separated when plating. You may also want to serve a higher carbohydrate/grain side for the kids like a dinner roll, pretzels, pasta, or pita chips.
