Turkey Pesto Sandwiches

Ingredients

8 slices sourdough bread
8 Tbsp pesto sauce
1 lb high-quality deli turkey
8 slices bacon
4 slices of provolone cheese
1 cup sun-dried tomatoes
8 Tbsp margarine
2 medium zucchini – side

Instructions

  1. Heat griddle or skillet over medium-high heat. Place two slices of bread side by side and spread 1 Tbsp pesto on each slice.
  2. On one slice, add ¼ of the turkey, followed by 2 slices of bacon, followed by one slice of provolone then 2 Tbsp of sun-dried tomatoes. Place the second slice of bread on top.
  3. Smear the top of the sandwich with 1 Tbsp margarine then place the side of the sandwich down on a griddle or skillet. Smear the remaining margarine over the top of the sandwich. Toast the sandwich until golden brown and cheese starts to melt, about 4-5 minutes per side. 
  4. Enjoy immediately!
