In a large skillet, cook ground beef over medium-high heat until no longer pink. Drain fat if needed.
Next, add the minced garlic, salt, pepper, paprika and taco seasoning to the meat and mix well.
Add the can of diced tomatoes, chicken broth and orzo to the pan and stir.
Turn heat down to medium-low, stir again and cover. Cook for approximately 10 minutes, stirring every few minutes so the orzo doesn’t stick to the bottom of the pan.
Once orzo is fully cooked, sprinkle on the cheese and stir well.
Optional: add toppings such as fresh tomatoes, and sliced green onions.
