This Creamy Pumpkin Ravioli with Sausage is a quick and cozy fall dinner ready in just 20 minutes. It's a healthy comfort food recipe that’s perfect for weeknights!
Cook the ravioli. Bring a large pot of salted water to a boil and cook the cheese ravioli according to package directions. Reserve ¼ cup of pasta water before draining. Set aside.
Brown the sausage. While the ravioli cooks, heat a large skillet over medium heat. Add the ground turkey sausage and cook, breaking it apart with a spatula, until browned and fully cooked through (about 6–8 minutes). Drain excess grease if needed.
Make the pumpkin sauce. In a blender or food processor, combine the cottage cheese, pumpkin puree, marinara sauce, reserved pasta water, salt, cumin, and garlic powder. Blend until smooth and creamy.
Combine sausage and sauce. Reduce the skillet heat to low and pour the pumpkin sauce over the cooked sausage. Stir well and let the sauce simmer for 2–3 minutes, until heated through.
Add ravioli. Gently toss the cooked ravioli into the skillet with the sauce and sausage and stir until the pasta is evenly coated and the cheese melts.
Top with the shredded parmesan cheese.
