This slow cooker Parmesan Pork Loin is tender, juicy, and full of savory flavor. It’s an easy set-it-and-forget-it dinner that’s high in protein and perfect for busy weeknights or cozy family meals.
In a small mixing bowl, combine the grated Parmesan, honey, soy sauce, dried basil, minced garlic, and olive oil. Stir well until fully blended.
Pat the pork loin dry with paper towels and season all over with ½ teaspoon salt. For a lower sodium option, you can skip the salt as the other ingredients contain salt.
Place the pork loin in the bottom of your slow cooker. Pour the Parmesan mixture evenly over the top, using a spoon or spatula to coat all sides.
Cover and cook on low for 6 hours, or until the pork is fork-tender and reaches an internal temperature of 145°F (63°C). You may want to check it around 5 hours for a smaller pork loin or tenderloin.
Once cooked, remove the pork loin and let it rest for 5–10 minutes before slicing. Spoon some of the cooking juices over the top for extra flavor.
