Easy Baked Pineapple BBQ Chicken is your new go-to weeknight dinner—high in protein, full of sweet and smoky flavor, and totally modifiable for picky eaters.
Preheat the oven to 400F. Prepare a baking dish and spray it with oil.
Grill the thin chicken breasts for about 5 minutes per side. Remove from skillet and place in prepared baking dish.
Spread BBQ sauce over the chicken breasts to cover. Then top with pineapple chunks.
Add the diced bacon and chopped red onion.
Finally, top with shredded mozzarella. Bake in the oven for about 20 minutes until the chicken is fully cooked.
Broil for 3-4 minutes to crispen up the cheese. Top with green onions before serving. Can also add additional pineapple if desired. Enjoy!
