- Chicken – I slice the chicken thin so it will bake quicker.
- BBQ Sauce – You can use a sugar free sauce, however, it will taste slightly different!
- Pineapple – I use fresh pineapple chunks but you can used canned if preferred.
- Bacon – To make prep easier, I use microwavable bacon to save time
- Onions – Small red onion and sliced green onions for the top.
- Toppings – Freshly shredded mozzarella will taste the best in my opinion but feel free to use pre-shredded to save time.

Ingredients
- 4 Thin boneless skinless chicken breast
- 1 serving Salt & pepper to taste
- 3/4 cup Bbq sauce
- 1 cup Pineapple chunks
- 4 strips Bacon chopped
- 1/4 cup Red onion chopped
- 1 cup Mozzarella cheese shredded
- 2 Green onions chopped
Instructions
- Preheat the oven to 400F. Prepare a baking dish and spray it with oil.
- Grill the thin chicken breasts for about 5 minutes per side. Remove from skillet and place in prepared baking dish.
- Spread BBQ sauce over the chicken breasts to cover. Then top with pineapple chunks.
- Add the diced bacon and chopped red onion.
- Finally, top with shredded mozzarella. Bake in the oven for about 20 minutes until the chicken is fully cooked.
- Broil for 3-4 minutes to crispen up the cheese. Top with green onions before serving. Can also add additional pineapple if desired. Enjoy!
