Bake for 25–30 minutes, stirring halfway through, until the carrots are tender and the parmesan is golden and crisp.
About 5 minutes before removing from oven, sprinkle the parmesan cheese on top and bake for an additional 5 minutes or until cheese is melted. Feel free to broil for a few minutes at the end for a more crisp carrot dish.
Season with extra salt and pepper if needed and serve warm. Enjoy! Optional: top with chopped parsley.
