Air Fryer Crispy Lemon Parmesan Chicken

Ingredients
- 2 Eggs
- 1/4 cup Lemon juice (about 1-2 lemons)
- 1 tbsp minced garlic
- 1/2 tbsp parsley (fresh or dried)
- 1 tsp salt
- 1 tsp pepper
- 1 lb boneless, skinless chicken
- 1 cup plain breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 lb brussels sprouts – side
Instructions

Combine the lemon juice, minced garlic, parsley, salt, pepper, eggs in a bowl and whisk together.

Pour mixture over chicken. If you have time to let it marinate in the fridge for 30 minutes, even better!

In a bowl, combine the breadcrumbs and grated Parmesan cheese.

Then dip the chicken in the mixture, lightly pressing to evenly coat.

Place chicken into the Air Fryer and cook at 390°F for about 15-18 minutes, making sure to flip the chicken about halfway through.

Sprinkle with Parmesan cheese and parsley if desired.
