Tuscan Tortellini Soup ingredients: chopped onion, crushed tomatoes, italian sausage, chicken broth, half and half, garlic, kale, parmesan and cheese tortellini.
  • Tortellini - I use a refrigerated 5 cheese tortellini, but you can switch it up and use any tortellini you prefer!
  • Sausage - the mild Italian sausage is perfect to keep the spice level down for kids, but if your family prefers a kick, go spicy!
  • Chicken Broth - this soup is naturally salty with the tomato sauce, cheese, and sausage, so you may want to use low-sodium broth.

➡️ Swap the Tortellini - Try cheese tortellini for a classic version, spinach tortellini for extra greens, or meat-filled tortellini for a heartier soup.

➡️ Add the Tortellini at the End - To keep the tortellini tender (not mushy), stir it in during the last 20-30 minutes of cooking.

➡️ Lighten it up - Use turkey or chicken sausage instead of pork. Keep in mind this will change the flavor a little, so you may need to add extra seasonings!

How to Make Tuscan Tortellini Soup

Step 1: In a large lightly greased pan, add sausage, onion, and garlic.

Step 2: Roughly chop while the sausage is cooking and cook over medium-high heat until the sausage is completely cooked through; about 8-10 minutes.

Step 3: In slow cooker, add chicken broth, crushed tomatoes, cooked sausage and all of the seasonings. Add lid and cook on high for 2-3 hours or low 4-5.

Step 4: After mixture is finished, add half & half, shredded parmesan, and tortellini and cook for another 20 minutes.

Step 5: Add chopped kale and cook another 10 minutes.

Ingredients
  

  • 28 ounce crushed tomatoes
  • 4 cups low sodium chicken broth
  • ½ yellow onion finely chopped
  • 1 pound sweet or spicy Italian sausage
  • 1 tablespoons garlic minced
  • ½ tablespoon dried basil
  • ½ tablespoon dried oregano
  • ½ teaspoon black pepper
  • 1.5 cups kale roughly chopped
  • ¾ cup half & half
  • ¾ cup grated parmesan cheese plus more for topping
  • 16 ounce package refrigerated cheese tortellini

Instructions
 

  • In a large lightly greased skillet, add sausage, onion, and garlic. Roughly chop while the sausage is cooking and cook over medium-high heat until the sausage is completely cooked through; about 8-10 minutes. Drain grease if needed.
  • Add chicken broth, crushed tomatoes, cooked sausage, and all of the seasonings to the slow cooker and cover with lid.
  • Cook on high for 2-3 hours or low 4-5.
  • Add half & half, shredded parmesan cheese, and tortellini and cook for another 20 minutes.
  • Add chopped kale and cook another 10 minutes.
