The Ingredients:

  • Onion & garlic - I prefer to use yellow onions in this recipe as I feel it blends well with the other ingredients and adds a subtle sweetness.
  • Ground turkey – I typically use 97% lean ground turkey in this recipe and feel that it works really well. If you're using 99% lean, you may want to increase the seasonings to flavor it well as sometimes ultra lean turkey can be flavorless.
  • Seasonings –Chili powder, cumin, salt
  • Crushed tomatoes
  • Chicken broth
  • Beans and corn  – I love black beans in this recipe, but you could swap them for kidney beans if you'd rather.

How To Make This Easy Turkey Taco Soup

First start by sauteeing the onions until translucent, then add the minced garlic to the pot.

Next add the turkey, chili powder, and cumin to the pot and mix well, breaking up the turkey and cooking until it has browned.

Add the crushed tomatoes, chicken broth, black beans and corn to the pot.

Next mix well, bring to a boil, then simmer for the next 20 minutes or so to let the flavors deepen. The longer you let it simmer, the more the flavors will blend!

Serve with optional toppings like shredded cheddar, sour cream, green onions, and/or tortilla strips.

➡️ Protein swap – Not a fan of ground turkey? You can use ground chicken, beef or even plant-based crumbles for a vegetarian option.

➡️ Spice it up – If you want a little kick, add diced green chiles or jalapenos. You can even add a pinch of cayenne pepper or crushed red pepper flakes for more spice!

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion finely diced
  • 3-4 garlic cloves minced
  • 1 pound lean ground turkey
  • 2 tablespoons chili powder
  • ½ tablespoon cumin
  • 1 28 ounce can crushed tomatoes
  • 4 cups chicken broth
  • 2 15 ounce cans black beans, drained and rinsed
  • 2 cups frozen corn
  • Salt to taste
  • Optional toppings: green onion sour cream, shredded cheddar, tortilla strips

Instructions
 

  • Heat the olive oil in a large pot over medium heat. When the oil is hot, add the onions and cook until translucent, about 5 minutes.
  • Next, add the garlic to the pot and cook another 1-2 minutes, stirring frequently.
  • Raise the heat to medium-high and add the turkey, chili powder, and cumin to the pot.
  • Stir to mix well and break up the ground turkey with a wooden spoon or spatula. Cook until it is browned, about 7 minutes or so stirring and chopping frequently.
  • Add the chopped tomatoes, chicken broth, black beans and corn to the pot. Raise the heat to high and stir the soup well to combine all of the ingredients.
  • When the soup comes to a boil, lower the heat to medium/low. Cover the pot and simmer the soup for at least 20 – 25 minutes. Stir every 5-10 minutes.
  • Serve with optional toppings like shredded cheddar, sour cream, green onions, and/or tortilla strips!
