Why You'll Love This Recipe
- Holiday Nostalgia - York Peppermint Patties have always reminded me of my grandma... she'd keep these at her house and I loved baking with her at Christmas! Pressing one onto a warm brownie cookie gives me that same cozy, nostalgic feeling every single time.
- Flavor Combo is So Good - Rich, fudgy chocolate meets cool peppermint. These cookies taste like a cross between a brownie, a Thin Mint, and a cup of hot cocoa.
- They're Fun to Make with Kids - Little hands love helping press the peppermint patties onto the warm cookies and honestly, that's the best part. No intricate decorating, no piping bags, just simple, delicious cookies. With the help of your little bakers, of course!

Select Ingredients

- Brownie Mix - my favorite kind to use in this recipe is the Betty Crocker Supreme Triple Chunk. It makes it more fudgy and less cakey! Any brand and kind will work though.
- Peppermint Patties - York... need I say more? It's gotta be York!

Recipe Tips & Variations
➡️ Don't Skip Chilling the Dough - This dough has to chill at least an hour. This helps the cookies hold their shape and stay thick and fudgy. If you bake the dough right away, they'll spread too much.
➡️ Use Parchment or Baking Sheet for Consistent Results - Because brownie cookies are softer and more delicate than regular cookies, parchment paper really helps them release cleanly. Also make sure your next batch goes onto a cool baking sheet. A warm one will cause premature spreading.
➡️ Switch to Brownies - If you don't feel like scooping cookies, make your favorite boxed brownie mix instead. Bake as directed, then lay peppermint patties on top of the hot brownies as soon as they come out of the oven. Gently swirl across the top to give it that nice minty topping.
How to Make Fudgy Peppermint Brownie Cookies

Step 1: Stir brownie mix, vegetable oil, flour, eggs, vanilla, and salt in a large mixing bowl until combined. Stir in chocolate chips. Place in the refrigerator for at least 1 hour prior to baking, otherwise cookie will spread flat.

Step 2: After dough is chilled ,preheat oven to 350 degrees Fahrenheit. Scoop 1 Tablespoon of mixture per cookie and place on prepared baking sheet. Bake for about 6-7 minutes until cookies look mostly done on the edges, but slightly doughy in the middle.

Step 3: Remove from oven and press 1 peppermint patty into each center gently. Place in oven for another 4-5 minutes until the patty looks like it's beginning to melt.

Step 4: Remove from oven and swirl gently just on top with a toothpick.

Step 5: Sprinkle with festive holiday sprinkles if desired. Let cool for at least 10 minutes or longer. Enjoy!
Recipe FAQs
Yes! The dough actually gets better with time. You can refrigerate it for up to 24 hours before baking, just let it sit at room temperature for about 10-15 minutes so it scoops more easily.
100%. Because this is a brownie-style dough, chilling keeps the cookies thick, and fudgy. If you bake the dough warm, the cookies will spread too much and lose their texture. Trust me on this one, I learned the hard way.
Use the regular, classic size, not the minis or the thins. The minis melt too quickly and the thins won't create that signature glossy peppermint cap.
