➡️ Don't Skip Chilling the Dough - This dough has to chill at least an hour. This helps the cookies hold their shape and stay thick and fudgy. If you bake the dough right away, they'll spread too much.

➡️ Use Parchment or Baking Sheet for Consistent Results - Because brownie cookies are softer and more delicate than regular cookies, parchment paper really helps them release cleanly. Also make sure your next batch goes onto a cool baking sheet. A warm one will cause premature spreading.

➡️ Switch to Brownies - If you don't feel like scooping cookies, make your favorite boxed brownie mix instead. Bake as directed, then lay peppermint patties on top of the hot brownies as soon as they come out of the oven. Gently swirl across the top to give it that nice minty topping.

How to Make Fudgy Peppermint Brownie Cookies

Step 1: Stir brownie mix, vegetable oil, flour, eggs, vanilla, and salt in a large mixing bowl until combined. Stir in chocolate chips. Place in the refrigerator for at least 1 hour prior to baking, otherwise cookie will spread flat.

Step 2: After dough is chilled ,preheat oven to 350 degrees Fahrenheit. Scoop 1 Tablespoon of mixture per cookie and place on prepared baking sheet. Bake for about 6-7 minutes until cookies look mostly done on the edges, but slightly doughy in the middle.

Step 3: Remove from oven and press 1 peppermint patty into each center gently. Place in oven for another 4-5 minutes until the patty looks like it's beginning to melt.

Step 4: Remove from oven and swirl gently just on top with a toothpick.

  • 1 package Brownie mix 18 ounce, I like triple chunk
  • cup Vegetable oil
  • 3 tablespoon All-purpose flour or more as needed
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Kosher salt
  • ¾ cup Semisweet chocolate chips
  • 24 York peppermint patties
  • 1 serving Optional: sprinkles

Instructions
 

  • Line 2 baking sheets with silicone mat or parchment paper. Set aside.
