This One Pan Chicken Caprese is a dish you're going to want to add to your next dinner menu! Its juicy, protein-packed chicken breasts are seared to perfection and topped with melty mozzarella, ripe tomatoes, and fresh basil-bringing all the classic Caprese flavors into a hearty, satisfying meal. Best of all, it comes together in just 30 minutes and uses only one pan, making cleanup a breeze.

The Ingredients:

  • Chicken - Thin boneless, skinless chicken breasts work great for this recipe. If you've got two large chicken breasts, slice them in half to reduce the thickness.
  • Olive oil
  • Garlic - You can use fresh garlic or jarred minced garlic
  • Cherry tomatoes - Sliced in half lengthwise
  • Fresh basil - Fresh basil tastes delicious in this recipe but if you don't have any, you can used dried basil in its place.
  • Fresh mozzarella - I like to use the sliced fresh buffalo mozzarella. Two slices will typically cover the chicken breasts well.
  • Balsamic vinegar
Chicken caprese ingredients: a bowl of cherry tomatoes, 2 large chicken breasts, sliced fresh mozzarella, a bowl of olive oil, a bowl of minced garlic, a small bowl of balsamic vinegar, and fresh basil leaves.

How To Make One Pan Chicken Caprese

First heat olive oil in a large skillet. Salt and pepper the chicken breasts and add to skillet. Cook for about 15 minutes, flipping each chicken breast half way through the cook time.

After chicken has reached 165 degrees Fahrenheit, remove from skillet and place on a plate. Cover with foil.

Add remaining 1 tablespoon olive oil to skillet and add garlic. Let cook for about 1 minute then stir and scrape bottom of the pan. Add the tomatoes and cook for about 5 minutes or so until skin has softened. Then add the basil.

Add chicken breasts back to skillet with tomatoes. Top with sliced mozzarella then cover with lid for a few minutes, letting mozzarella melt.

Drizzle with balsamic vinegar to taste and serve!

Ingredients
  

  • 4 thin boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoon olive oil divided
  • 3 garlic cloves minced
  • 2 cups cherry tomatoes halved
  • 1 bunch fresh basil chopped
  • 4 oz fresh mozzarella sliced into ½ oz slices
  • Balsamic vinegar to taste

Instructions
 

  • In a large saute pan over medium-high heat, warm 1 tablespoon olive oil.
  • Salt and pepper each chicken breast on both sides and add to pan. Cover and cook for about 15 minutes or so, flipping chicken breasts half way through.
  • Once chicken breasts has reached 165 degrees F, remove from pan and place on a plate. Cover with foil.
  • Add 1 tablespoon olive oil to the same pan over medium heat. Add garlic and cook for about 1 minute, scraping the bottom of the pan.
  • Next add halved tomatoes and saute until the skins soften which should take about 5 minutes or so.
  • Stir in the chopped basil and add the chicken breasts back to the pan.
  • Top each chicken breast with 2 slices of the fresh mozzarella. Cover pan with lid and let the mozzarella melt. This should take a few minutes.
  • Drizzle with a splash of balsamic vinegar and serve!
