Select Ingredients

- Chicken - Thin boneless, skinless chicken breasts work great for this recipe. If you've got two large chicken breasts, slice them in half to reduce the thickness.
- Fresh basil - Fresh basil tastes delicious in this recipe but if you don't have any, you can used dried basil in its place.
- Fresh mozzarella - Using sliced fresh buffalo mozzarella is delicious in this recipe. Two slices will typically cover the chicken breasts well. Definitely use this over a shredded mozzarella block!

Recipe Tips & Variations
➡️ Marinate for more flavor - For extra juicy, flavorful chicken, marinate the breasts in olive oil, balsamic vinegar, minced garlic, and Italian seasoning for at least 30 minutes before cooking. This simple step adds bold Caprese flavor and helps keep the chicken tender and moist.
➡️ Create a salad or sandwich - Slice the Caprese chicken and serve it over mixed greens for a light Caprese chicken salad, or layer it on toasted sourdough or ciabatta for a Caprese chicken sandwich - perfect for lunch or meal prep.
How To Make One Pan Chicken Caprese

Step 1: Salt and pepper each chicken breast on both sides and add to olive oil pan. Cover and cook for about 15 minutes or so, flipping chicken breasts half way through. Remove from pan and cover on a plate.

Step 2: Add 1 tablespoon olive oil to the same pan and add garlic and cook for about 1 minute. Next add halved tomatoes and saute until the skins soften.

Step 3: Stir in the chopped basil and add the chicken breasts back to the pan. Top each chicken breast with 2 slices of the fresh mozzarella. Cover pan with lid and let the mozzarella melt. Then drizzle with balsamic vinegar. Serve warm and enjoy!
Recipe FAQs
Absolutely! Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat on the stove or in the microwave, and add a splash of broth or water if it needs moisture.
Yes, you can use canned tomatoes if fresh ones aren't available! Choose high-quality diced or fire-roasted tomatoes and drain them well before adding to the pan. Fresh tomatoes give a brighter, juicier flavor, but canned works great for a quick, year-round version of this Caprese chicken.
You can... while balsamic adds classic flavor, you can skip it or use a drizzle of balsamic glaze, red wine vinegar, or even lemon juice for flavor if you'd like.
