- Sweet potatoes - You can use white potatoes if preferred, but the sweet potatoes really enhance the flavor in this recipe!
- Lean ground turkey -Use 97-99% lean ground turkey to keep the fat low and the protein high. You can swap this out with ground chicken or beef if preferred, just keep in mind this will change the nutritional profile.
- Pepper jack cheese - The kick of the Pepper Jack cheese is next level in this recipe but if you want to take the spice down, you can use Monterey Jack or cheddar instead for a creamy cheese.

➡️ Change the potato - While this is delicious with sweet potatoes, russet potatoes also work if that's your preference!
➡️ Add extra veggies - You can add sauteed onions and bell peppers when you're browning the turkey if you'd like extra veggies.
➡️ Switch up the cheese - Pepper Jack cheese is my favorite for this recipe but you can swap out for cheddar or Monterey Jack if you prefer.
How To Make These Turkey Taco Sweet Potatoes

Step 1: Heat a large skillet over medium-high heat and grease with olive oil. Add the ground turkey and cook, breaking it up with a wooden spoon or spatula, until cooked through. Stir in the spices for a minute. Then stir in the crushed tomatoes.

Step 2: Place the pierced potatoes on a microwave safe plate and cook according to instructions. Scrape the insides and mix with olive oil and spices. Fill each potato with this mixture.

Step 3: Next add the meat mixture on top, dividing evenly among the 4 potatoes. Top with shredded cheese.

Step 4: Turn the broil on. Broil until the cheese is melted then remove. Top with green onions if desired. Enjoy!

Turkey Taco Sweet Potatoes
Ingredients
- 2 Sweet potatoes
- 1 teaspoon Olive oil
- 1 ¼ teaspoon Ground cumin divided
- 1 lb Lean ground turkey
- 4 Garlic cloves minced
- 1 teaspoon Chili powder
- ½ teaspoon Oregano dried
- ½ teaspoon Paprika
- ¼ teaspoon Table salt
- 1 ¼ cup Crushed tomatoes
- ½ cup Pepper jack cheese grated
Instructions
- Pierce the sweet potatoes all over with a fork. Cook in the microwave on HIGH until tender when pierced with a fork, about 4-5 minutes. Carefully flip the potato over (it will be hot), then cook for another 4-5 minutes. Let the potatoes cool for a few minutes before handling.
- While the potatoes are in the microwave, heat a large skillet over medium-high heat and coat with cooking spray or oil. Add the ground turkey and cook, breaking up with a wooden spoon or spatula, until cooked through. Stir in the garlic, chili powder, ¾ teaspoon cumin, oregano, paprika, and ⅛ teaspoon salt and pepper. Cook for 1 minute. Stir in the crushed tomatoes.
- Once the potatoes are done, cut them in half lengthwise. Carefully scoop the flesh out of the potatoes and place it in a medium-sized bowl. Reserve the skins. With the back of a fork, mash the potato flesh until most lumps are gone. Stir in the olive oil, ½ teaspoon cumin, ¼ teaspoon salt, and ¼ teaspoon pepper Divide the mashed sweet potato evenly between the potato skins. Place on a baking sheet.
- Preheat the broiler. Spoon the turkey mixture into each sweet potato skin. Top each with Pepperjack cheese. Broil until the cheese is melted (probably about 1 minute or so) then remove.
- Top with green onions if desired. Enjoy!
