- Sweet potatoes - I like to find ones that are shaped more oval because these lay a little nicer once they are cut in half.
- Olive oil
- Lean ground turkey -Use 97-99% lean ground turkey to keep the fat low and the protein high.
- Spices & Garlic- chili powder, oregano, paprika, salt, pepper, cumin, minced garlic
- Crushed tomatoes
- Pepper jack cheese - shredding your own will taste much better and melt beautifully
How To Make These Turkey Taco Sweet Potatoes

Begin by piercing the sweet potatoes all over with a fork. The key to making this recipe quick is to microwave the sweet potatoes. Place the pierced potatoes on a microwave safe plate and cook for 4-5 minutes. Flip over onto the other side and microwave another 4-5 minutes.
While the potatoes are in the microwave, heat a large skillet over medium-high heat and coat with cooking spray. Add the ground turkey and cook, breaking it up with a wooden spoon or spatula, until cooked through. Stir in the garlic, chili powder, ¾ teaspoon cumin, oregano, paprika, and remaining ⅛ teaspoon salt and pepper. Cook for 1 minute. Stir in the crushed tomatoes.
Once the potatoes are done, let them cool for a few minutes then cut them in half lengthwise. Carefully scoop the flesh out of the potatoes and place it in a medium-sized bowl. Reserve the skins. With the back of a fork, mash the potato flesh until most lumps are gone. Stir in the olive oil, ½ teaspoon cumin, ¼ teaspoon salt, and ¼ teaspoon pepper Divide the mashed sweet potato evenly between the potato skins. Place on a baking sheet.
Preheat the broiler. Spoon the turkey mixture into each sweet potato skin. Top each with Pepperjack cheese.
Broil until the cheese is melted then remove. Top with green onions if desired. Enjoy!

➡️ Change the potato – While this is delicious with sweet potatoes, russet potatoes also work if that's your preference!

- 2 Sweet potatoes
- 1 teaspoon Olive oil
- 1 ¼ teaspoon Ground cumin divided
- 1 lb Lean ground turkey
- 4 Garlic cloves minced
- 1 teaspoon Chili powder
- ½ teaspoon Oregano dried
- ½ teaspoon Paprika
- ¼ teaspoon Table salt
- 1 ¼ cup Crushed tomatoes
- ½ cup Pepper jack cheese grated
Instructions
- Pierce the sweet potatoes all over with a fork. Cook in the microwave on HIGH until tender when pierced with a fork, about 4-5 minutes. Carefully flip the potato over (it will be hot), then cook for another 4-5 minutes. Let the potatoes cool for a few minutes before handling.
- While the potatoes are in the microwave, heat a large skillet over medium-high heat and coat with cooking spray or oil. Add the ground turkey and cook, breaking up with a wooden spoon or spatula, until cooked through. Stir in the garlic, chili powder, ¾ teaspoon cumin, oregano, paprika, and ⅛ teaspoon salt and pepper. Cook for 1 minute. Stir in the crushed tomatoes.
