- Ground Beef - I prefer 93% lean or leaner to keep the fat content low
- Bell Peppers - You can choose any colors you'd like. I like to keep it colorful by using different colors in this recipe.
- Cheese - Monterey Jack works great in this recipe but if you want to add a little kick, swap it out for Pepper Jack!

Recipe Tips & Variations
➡️ Choose Wide Bell Peppers: I find that choosing wide bell peppers to slice with help the meatloafs stand well and give more space to fill with the meat mixture.
➡️ Check for Doneness - These typically cook through in 30 minutes, however it's always a good idea to check and ensure that the internal temperature hits 160 degrees F.
➡️ Let Them Rest - I have found that these are easier to handle if you let them sit for about 5 minutes or so after you pull them from the oven. Use a spatula to remove them off the cooking sheet.

How to Make Bell Pepper Meatloaf

Step 1: Preheat over to 350 degrees. Slice bell peppers into 1 -1.5″ thick slices and lay on a baking sheet with parchment paper.

Step 2: In a large bowl, mix beef, egg, tomato paste, Worcestershire sauce, salt, pepper, remaining pieces of pepper chopped into small pieces, and Italian bread crumbs together until well-combined.

Step 3: Scoop meat mixture into peppers evenly.

Step 4: In a small bowl, whisk ketchup and brown sugar together and brush on top of the meatloaves. Bake at 350 degrees F for 30 minutes.

Step 5: Take out of the oven and top with Monterey Jack cheese then place the baking sheet back in the oven until the cheese has melted, about 5 minutes.

Step 6: Top with sliced green onions or parsley. Enjoy!

- 1 egg
