  • BBQ Sauce - You can use a sugar free sauce, however, it will taste slightly different so keep that in mind.
  • Pineapple - I use fresh pineapple chunks but you can used canned if preferred.
  • Bacon - To make prep easier, use microwavable bacon to save time

How To Make Easy Baked Pineapple BBQ Chicken

4 thinly sliced chicken breasts that have been grilled and placed in 9x13 baking dish.

Step 1: Grill the thin chicken breasts then place in a greased 9x13 baking dish.

Step 2: Add the BBQ sauce, pineapple, chopped onion and bacon on top of the chicken breasts.

Ingredients
  

  • 4 Thin boneless skinless chicken breast
  • 1 serving Salt & pepper to taste
  • ¾ cup Bbq sauce
  • 1 cup Pineapple chunks
  • 4 strips Bacon chopped
  • ¼ cup Red onion chopped
  • 1 cup Mozzarella cheese shredded
  • 2 Green onions chopped

Instructions
 

  • Preheat the oven to 400F. Prepare a baking dish and spray it with oil.
  • Grill the thin chicken breasts for about 5 minutes per side. Remove from skillet and place in prepared baking dish.
  • Spread BBQ sauce over the chicken breasts to cover. Then top with pineapple chunks.
  • Add the diced bacon and chopped red onion.
  • Finally, top with shredded mozzarella. Bake in the oven for about 20 minutes until the chicken is fully cooked.
  • Broil for 3-4 minutes to crispen up the cheese. Top with green onions before serving. Can also add additional pineapple if desired. Enjoy!
