- Dark Chocolate - you can use any chocolate you'd like in this recipe. I prefer a dark chocolate bar or melting wafers but you can use semi-sweet or milk chocolate as well.
- Powdered Peanut Butter - I love using powdered peanut butter and mixing with water as it keeps the calories and fat content much lower than traditional peanut butter. You can use regular peanut butter or an alternative nut butter if you prefer.
- Salt - coarse sea salt works great in this recipe.

➡️ Microwave chocolate carefully: Heat in 20-30 second intervals, stirring in between, to prevent burning and achieve a smooth texture.
➡️ Swap nut butters - You can swap for an almond butter or regular peanut butter in this recipe as well! The powdered peanut butter will keep the calories and fat content lower, so keep that in mind if you do swap.
➡️ Make them mini - Use a mini muffin pan for bite-sized treats perfect for snacking or lunchboxes.
How to Make Healthy Peanut Butter Cups

Step 1: Start by melting chocolate and mixing the powdered peanut butter with water.

Step 2: In muffin liners, layer 1 tablespoon melted chocolate, the mixed peanut butter, and top with a slice of banana.

Step 3: Top each with 1 tablespoon melted chocolate until lightly covered. Sprinkle with coarse salt and place in the freezer for about 45 minutes until firm.

Step 4: Remove from muffin liners and enjoy!

Healthy Peanut Butter Cups
Ingredients
- 6 oz Dark chocolate
- 5 tablespoon Pb2
- ½ Banana
- ¼ teaspoon Sea salt
Instructions
- Place your chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring after each, until fully melted and smooth.
- Spoon about 1 tablespoon of melted chocolate into the bottom of each of 6 muffin cups.
- In a small bowl, combine 5 tablespoons PB2 powdered peanut butter with 5 tablespoons water. Stir until smooth and well blended.
- Evenly distribute the peanut butter mixture over the chocolate layer in each muffin cup.
- Place one banana slice on top of the peanut butter layer in each cup.
- Spoon about 1 tablespoon of melted chocolate over each banana slice to cover.
- Sprinkle each cup with a pinch of coarse sea salt. Freeze for approximately 45 minutes, or until firm.
