- Chicken - I recommend chicken breasts for this recipe because they're lean but you could use chicken thighs if you prefer
- Lettuce - I've only used romaine lettuce in this recipe but you could swap for whatever lettuce you prefer or have on hand
- Rice - Microwavable brown rice all the way! I've made it with jasmine rice and it tastes great too.
- Greek yogurt - I've only ever used Greek yogurt for the sauce, but my friend uses blended cottage cheese and loves it!

➡️ Swap up the Sauce - Try blended cottage cheese instead of Greek yogurt, add extra lime or try to add little bits of avocado to add to the creaminess. Feel free to adjust the seasonings to your liking to make it spicier.
How to Make Street Corn Chicken Rice Bowls

Step 1: Prepare the chicken: Cut the chicken into bite-sized cubes. In a medium bowl, toss with 1 tablespoon of olive oil and your seasonings until evenly coated.

Step 2: Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken and cook for about 8-10 minutes, until fully cooked and the internal temperature reaches 165°F.

Step 3: In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, paprika, garlic powder, salt, and pepper until smooth and well combined.

Step 4: In a large bowl, combine the chopped ingredients for the corn mixture. Add the cotija cheese and half of the dressing, then toss to coat. Set aside.

Step 5: Assemble the bowls by dividing the romaine, rice, cooked chicken, and street corn mixture among serving bowls. Drizzle with additional dressing and top with chopped tomatoes, avocado, jalapeños, or any of your favorite toppings.
