Broccoli Chicken Cauliflower Casserole

This broccoli chicken cauliflower casserole is a dish you’re going to love! Not only does it have 40 grams of protein per serving, it’s packed with fiber and cruciferous vegetables that promote hormonal balance and heart health plus bring antioxidants to keep your body healthy.

Ingredients:

  • 2 lb cooked chicken breasts (boneless, skinless, cubed)
  • The veggies – cauliflower rice & broccoli cuts. I prefer to use the frozen steamable bags of these. It’s super easy and requires no dirty dishes!
  • Eggs & cheese – 2 large eggs, mozzarella cheese, Italian cheese
  • Seasonings – salt, garlic powder, & onion powder
  • Butter – 2 melted tablespoons

The Instructions:

1: Preheat oven to 400°F. Spray a large 3-quart baking dish with non-stick cooking spray or olive oil. Set aside.

2.  If you’ve not yet cooked your chicken, grill it on the stove top. You can also bake it if preferred, though this takes a bit longer.

3.  While the chicken is cooking, heat the bags of frozen cauliflower rice and broccoli according to package instructions, one bag at a time. Discard any excess water or moisture.

4.  Carefully chop baked chicken into bite-sized pieces.

5.  In a very large bowl, add cooked cauliflower rice, broccoli, chicken, eggs, mozzarella cheese, salt, garlic powder, onion powder and melted butter. Toss together until fully combined.

6.  Transfer casserole mixture to the prepared baking dish and top with the remaining Italian blend cheese.

7.  Bake for 50 minutes, until the cheese on top has fully melted and started to brown slightly. Let cool for 10 minutes before serving.

  • 2 10- ounce bags frozen cauliflower rice or 1 head of cauliflower, riced and cooked
  • 1 16- ounce bag frozen broccoli cuts
  • 2 large eggs whisked
  • 3 cups shredded mozzarella cheese
  • 2 teaspoons coarse sea salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 tablespoons butter melted
  • 1 cup shredded Italian blend cheese

Recipe Tips & Storage

➡️ Make Ahead – You can prep this dish through step 6, then cover with foil and place in your refrigerator until you’re ready to bake it if you’d like to do a little prep ahead of your meal time!
➡️ Chicken – If you want to use less chicken, you can! I like to use 2 lbs for the extra protein. It seems to make the recipe a little more hearty.
➡️ Meal Prep Friendly – Store leftovers in an airtight container in the fridge for up to 3-4 days. Can freeze this recipe for about 3 months. I’d recommend freezing in individual containers for easy access.

What To Serve With This Casserole

  • Bread/Toast/Roll – this recipe is fairly low in carbohydrates so there is room to add a roll or a slice of bread. I’ve even served some noodles on the side for my kids and they love it.
  • Fruit – a serving of fruit may be nice with this as well to give you extra nutrients and carbohydrates. Try apple slices or mixed berries.
