- Carrots - I like whole, peeled, cut carrots in this recipe, but you can use baby carrots if you prefer! A few things to note if using baby carrots: you need to dry them well and still slice them in half so they cook well.

How To Make These Parmesan Roasted Carrots

Step 1: Preheat the oven to 400°F. In a large bowl, whisk together olive oil, honey, salt, and pepper. Toss the carrot sticks in the mixture until evenly coated.

Step 2: Spread the carrots in a single layer on the baking sheet.

Step 3: Bake for 25-30 minutes, stirring halfway through, until the carrots are tender and the parmesan is golden and crisp.

Step 4: About 5 minutes before removing from oven, sprinkle the parmesan cheese on top and bake for an additional 5 minutes or until cheese is melted. Feel free to broil for a few minutes at the end for a more crisp carrot dish.
