This Strawberry Fields Salad is my all time favorite salad! As a dietitian, I love that it's the perfect mix of sweet strawberries, crisp greens, juicy grilled chicken, and heart healthy fats to make it a well-balanced meal that tastes incredible.

  • Lean Chicken Breasts - You could use rotisserie chicken instead for easy of prep
  • Pecans - candied pecans would be delicious in this recipe! Just keep in mind it will change the nutrition composition.
  • Bacon - When I'm short on time, I like to use microwavable bacon.
  • Dressing - olive oil, apple cider vinegar, honey, sugar, Dijon mustard, salt & pepper

Ingredients
  

Dressing

  • ¼ cup apple cider vinegar
  • 2 tablespoon honey
  • 2 tablespoon white sugar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • ½ cup olive oil

Salad

  • 10 oz package of mixed greens
  • 2 cups sliced strawberries
  • ½ red onion thinly sliced
  • ½ cup feta cheese
  • ½ cup pecans
  • 4 slices of bacon cooked and crumbled
  • 2 grilled chicken breasts sliced

Instructions
 

  • To make the dressing, whisk together all ingredients except oil. Gradually whisk in oil.
  • In a large salad bowl, toss together greens, strawberries, onion, feta cheese, chicken, bacon, and pecans.
  • Drizzle with dressing and serve immediately.
